Kathy’s Maple Cajun Mahi Mahi with Rice

A great sweet and spicy way to enjoy fresh Mahi Mahi

Ingredients – Mahi Mahi

  • 1 tablespoon olive oil
  • 2 tablespoon Springboro Tree Farms maple syrup
  • 1 tablespoon Cajun seasoning (we enjoy the extra spicy version)
  • 1/2 teaspoon garlic powder
  • Two 4-oz Mahi Mahi fillets

Ingredients – Rice

  • 4 portions of rice
  • 6 tablespoons of melted butter
  • 1 package of Lipton dry onion soup mix

Directions – Mahi Mahi

Heat oil in cast iron pan
Stir maple syrup, Cajun seasoning and garlic powder together in a small bowl
Rinse and pat dry the Mahi Mahi fillets
Brush syrup-seasoning mixture over both sides of the fillets
Cook fillets in hot oil until the fish flakes easily with a fork
…3-5 minutes per side

Directions – Rice

Cook rice and place in small bowl
Mix melted butter and dry onion soup mix in small bowl
Pour butter-onion soup mixture over cooked rice while finishing Mahi Mahi
