A healthy and tasty meal for the whole family using maple syrup to make a favorite dish of fried rice even more special.

Total Time

30 minutes more or less

[4 – 6 servings]

Olive Oil

½-1 lb. Bacon

4 Eggs, beaten

1 cup Chopped Broccoli

4 cloves Minced Garlic

½ cup Frozen Peas

5 Chopped Scallions

4 cups Cooked Brown (or White) Rice

Salt and Pepper

¼ cup Soy Sauce

3 Tbsp Springboro Tree Farms Maple Syrup

2 Tbsp Butter

2 tsp Dried Onion Flakes

Pinch Red Pepper Flakes

In a large skillet or pot, cook the bacon over medium-high heat until done. Remove, crumble, and set aside. Wipe excess grease out of pan.
Add more oil if needed and pour the eggs into the pan. Cook until just set, remove from pan, and set aside. Wipe pan out if needed.
Add 1 Tbsp oil to the pan and stir fry broccoli and garlic until just tender, about 4 minutes. Add peas and scallions and stir fry for 1-2 more minutes. Season with salt and pepper.
Add cooked rice to pan and cook until heated through. Stir in bacon and eggs, then drizzle with Maple Soy Sauce (recipe follows.)

Maple Soy Sauce – In a small saucepan, combine soy sauce, Springboro Tree Farms maple syrup, butter, onion, and red pepper flakes. Bring to a boil and simmer gently for 2-3 minutes.
