Healthy and delicious…a great combination for the holidays…or any time for that matter!!!
Ingredients
- 3 – 4 sweet potatoes
- 2 tablespoon coconut oil (or butter if you don’t want to go dairy free)
- 1/2 teaspoon ground cinnamon
- 1/4 (ish) cup Springboro Tree Farms maple (or walnut) syrup
- Salt & pepper to taste
Directions
Pre-heat oven to 450 degrees
Cut sweet potatoes into 1/2 – 3/4 inch cubes with the skin on
Mix ingredients in one bowl
Bake in an ungreased 9 x 13 pan
…25-30 minutes or until soft
