Cathy and Mike’s Soft Honey Cookies

Soft cookies are simply the best…and who doesn’t love a soft honey cookie!!!

Total Time

Prep: 15 minutes + chilling

Bake: 8-10 minutes

Makes 16 cookies


1/4 cup sugar

2 tablespoons canola oil

1 large egg

3 tablespoons of Springboro Tree Farms honey

1 cup plus 2 tablespoons all purpose flour

3/4 tsp. vanilla extract

1/4 tsp. baking powder

1/2 tsp. ground cinnamon

1/8 tsp. sea salt


  1. In a small bowl, beat sugar and oil until blended. Beat in egg, then honey and vanilla. Combine the flour, baking powder, cinnamon and salt; gradually add to sugar mixture and mix well (dough will be stiff). Cover and refrigerate for at least two hours.
  2. Drop dough by tablespoonsfuls two inches apart onto a greased baking sheet. Bake at 350 degrees for 8-10 minutes or until bottoms are lightly browned. Cool for 1 minute before removing from baking sheet to wire cooling rack. Store in an airtight container.
