Kristin’s Honey Marinade Salmon with Fruit

This dish is simply amazing! The fresh bright flavors you get with honey-marinade salmon and fruit are really really good together.

 Total Time

 1 – 2 hours marinade

 10 – 15 minutes cook and serve

Salmon – Ingredients and Directions

  • INGREDIENTS
  • 1/4 – 1/2 cup fresh orange juice about 1-2 medium oranges
  • 2 tablespoons Springboro Tree Farms honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 tablespoons of minced garlic
  • a generous pinch/squeeze of ginger (ginger paste or ground ginger)
  • 1-3 pound salmon fillet (depending on how many you want to feed!)
  • Mix orange juice, honey, soy sauce, olive oil, garlic, and ginger together.  Add the mix to a large zip lock bag.
  • DIRECTIONS:
  • Add the salmon to the zip lock bag and marinate for 1-2 hours
  • Remove the salmon from the zip lock bag and either grill it on a grill pan or pan-fry it.  Cook 2 – 5 minutes (depending on thickness of salmon) on the first side and then another 2-5 minutes on the second side.   

 Fruit Salsa – Ingredients and Directions

  • INGREDIENTS:
  • 2 cups of mango pieces (I used frozen, already diced mango)
  • 1 medium red bell pepper – diced
  • 1 cup of blueberries (I used fresh; could probably use frozen as well)
  • 1-2 jalapeno peppers – deseeded and diced 
  • 1/4 cup of cilantro – chopped
  • 3 green onions – diced
  • 1 tablespoon of lime juice
  • DIRECTIONS:
  • Combine all ingredients and add salt to taste.  Note: When making this for a family who have spice loving and non-spice loving members, another option is to leave out the jalapeno peppers and just add hot sauce to the plates of those who want it spicy.  Everybody wins!!! That is the way we cooked it in the picture.

Tortilla Serving Directions

1.  Heat up a flour tortilla shell

2.  Add salmon

3.  Top with fruit salsa

4.  Enjoy
